I was told they’re sea crabs which come from the Mangalore region. Anyone knows better?? ..

Was so happy to find this Tea Shop in Indiranagar #Bangalore today
In a day filled with back-to-back work meetings, I was called to Lazy Suzy for a meeting and happened to spot this nicely done up shop with lotsa fun wall creatives. The Samovar told me that this’s my kinda place for sure
So I shifted my meeting to Chai & Kadi (that’s the name of the tea shop). Avo shake was replaced by the good ol’ Chai-ya (Kerala style tea)
The Kerala tea is special. Unlike the boiled tea which one gets elsewhere in the country. Which can be at best described as of national obsession to drink tea flavoured milk. Kerala actually brews tea and adds it to the milk
The tea leaves in question are obviously Crush-Tear-Curl (CTC) which produces a strong cuppa and I suspect a bit of tea dust’s added
Chai & Kadi is a wonderful concept run by a Malayali couple from Calicut and with their young daughter to help. Had some lovely snacks there including Elae-Ada (rice flour dumpling with a stuffing of coconut and sugar, wrapped in banana leaf and steamed), Param Narachathe (ethekya banana stuffed with coconut and batter fried), Kappa-Chammandi (steamed tapioca with a pounded spicy green chilly-onion-ginger dip)
And finally there was something called Love Letter, a rolled pancake with a cooked coconut and sugar stuffing. The Malayali sense of humour coming through nicely with Love Letter 😊
I love Chai and Kadi. The problem with tea places in India is the trap of pretentiousness they fall into. Places like C&K are a breadth of fresh air and I sincerely hope they find their feet and do well

Sweet Corn Chicken Soup ( Sweet Corn was replaced by Pearl Barley) and Tomato Soup (made with grilled tomato and green Ragi)

Had an excellent meeting with Mr. Krishna Byre Gowda (Karnataka Agriculture Minister) today in Bangalore and a fab Millets lunch cooked by the students of MS Ramiah College

Chef Nishant Choubey from Roseate made a presentation on Cuisine Sans Frontiers
Chef Vipul Gupta from Anamaya presented his case on Cooking with Lost Ingredients
Chef Priyam Chatterjee from Qla made a presentation about The Future of Hâute Cuisine in India
Chef Megha Kohli made a presentation about How Cuisines are Reborn
We ran about of time and everyone was hungry. Hence Prateek Arora from Qla couldn’t make his presentation about Trends in Drinks with Indian Roots and my presentation was on Sustainable Kitchen Planning - Some other time perhaps
A big thanks to @sourishb1963 and @sanjoom for giving us the opportunity to be part of this wonderful forum. I hope there are many more of these knowledge sharing sessions ..
